Del Maguey Pechuga is made in very small batches in the village of Santa Catarina Minas, with 100% Espadín agave. The spirit is naturally fermented and distilled three times in traditional clay stills with bamboo tubing. Vista Flores is a tiny appellation in Mendoza, super high up 1150 metres above sea level. Long sunny days ripen grapes to concentration, while the cool nights high in the mountains and the alluvial limestone soils retain refreshing acidity. There's a lick of malolactic fermentation (a slight buttery / creamy acidity that you see in some richer whites), but the fresh orchard fruit and steely minerality takes dominance over this wine.
