The secret of modern rosé vinification is to capture all the delicate aromatics and flavours of red grape varieties but then to cool vinify the pale-coloured juice with all the expertise of white wine vinifcation. Del Maguey Pechuga is made in very small batches in the village of Santa Catarina Minas, with 100% Espadín agave. The spirit is naturally fermented and distilled three times in traditional clay stills with bamboo tubing.
